Welcome to Brewster Pastry, where every bite narrates a tale of timeless French baking expertise! Our dedication to authentic French baking is epitomized by experience that spans two generations- our founder and Master Baker Thierry Danvin, and his daughter Baker Emma Danvin.
Working together closely as a team, Thierry & Emma infuse decades of mastery and a relentless pursuit of perfection into each piece from the ovens at our award-winning bakery, right to you.
It all started in Lure, France, a small town located near the border of Switzerland and Germany- where Master Baker Thierry Danvin grew up.
Theirry pursued an extensive apprenticeship in France, before eventually becoming “Chef Boulanger & Patissier” at Club Med, the renowned French travel and tourism operator specializing in all-inclusive holidays.
Over his decade-long tenure with Club Med, he not only honed his skills baking across numerous countries worldwide, including Europe, Israel, Switzerland, Bahamas, Brazil, Australia, Mexico, St. Lucia and the United States, but also became a mentor, imparting the art of old-world French baking to bakers from diverse backgrounds.


Family-Owned Bakery Since 2007
At Club Med was also where Thierry first crossed paths with his wife Susan, while baking amidst the picturesque setting of Turks and Caicos Islands. Shortly after they decided to settle down in New York and welcomed their daughter, Emma to the world.
In 2007, Chef Thierry embarked on a new chapter by establishing Brewster Pastry, a cherished family-owned bakery, nestled in the bustling Towne Centre Plaza on Route 22, right in the heart of Brewster, NY and offering an extensive array of desserts and baked goods, meticulously crafted from the finest ingredients, including pies & tartes, cookies, pastries, croissants, danish, handmade bread & bagels, and cakes.
Daughter Emma Danvin has been a part of the business since day one. At a young age, one could find Emma helping out at the bakery and practicing her baking skills after school and on weekends.
“When my dad signed the lease for the Bakery it was initially all offices. At 9 years old I would go with him after school and on weekends to help knock down walls and rip up carpet. I spent a lot of time here in the beginning phases of building the Bakery.”

Two Generations of Baking Excellence
After high school, Emma went to college while continuing to work and master her skills as a baker around her school schedule. After graduating college Emma returned to the Bakery full-time, and now alongside her father continues the old-world baking traditions passed down and available to you.
Since then, Brewster Pastry has gone on to showcase the difference of hand-made, old-world style baking and flavor by winning numerous commendations, including being awarded the 2022 Best Bakery in Putnam County.
As a part of the community, Brewster Pastry has partnered with and contributed to numerous events over the years including Carmel and Brewster Teachers Associations, Camp Herrlich, Patterson Library, Patterson Fire Department, Brewster Fire Department, Putnam Lake Fire Department, St Jude’s, Putnam Hospital, Brewster and Carmel PTA, The Arc of Carmel and more.
